Chef Fabio Nompleggio teams up Michel Star Chef Riccardo Di Giacinto for the Sixth Italian Cuisine World Summit
The Summit will take place from 7 to 20 November, and the theme of the special menus at Frankie's will be ‘Marco Pierre White – the institution of culinary excellence’. To celebrate the summit, a special four day event will be held at Frankie’s, hosted by Michelin star Chef Riccardo Di Giacinto of All’Oro Roma, one of Marco’s most talented protégées.
Chef Riccardo gave culinary school a miss in order to train under the renowned Marco Pierre White, a legend of his generation and an inspiration for the next. In 2007, Chef Riccardo opened All’Oro in Rome’s Parioli neighbourhood, winning widespread acclaim for his creations that reflected his experiences with Marco. Having won several awards and medals, All’Oro received its first Michelin star in 2010, and has become increasingly popular ever since.
Chef Riccardo has created a special bespoke menu as part of the Summit, featuring his Michelin-star, Marco-inspired creations. The four course set menu will be available to diners on 16, 17 and 19 November, and will feature creations such as Ravioli di burrata con acciughe e datterini, ravioli filled with burrata, anchovies sauce and stew cherry tomato; Tonno arrosto, panzanella alla romana e zabaglione al limone, roasted tuna, panzanella salad and lemon zabaglione and Rocher di coda alla vaccinara con gelee’ di sedano, oxtail rocher served with celery gelee. The menu is priced at AED 365, and at AED 615 with grape pairing.
On 18 November, Frankie’s will host a gala dinner to introduce a 5-course menu jointly-created by Chef Riccardo and Frankie’s Executive Head Chef, Fabio Nompleggio. The theme of the evening is ‘Il lusso della semplicità’, Italian for ‘The Luxury of Simplicity’, and is a culinary interpretation of Marco’s adage - “It’s all about eating, it’s as simple as that”. The special menu interprets this adage with creations including Scampi, cima di rapa, yoghurt di bufala, seared Mediterranean langoustine, turnip top, buffalo yoghurt; Agnolotti al parmigiano, cipolla rossa e salsina al caviale, Agnolotti filled with aged parmesan, red onion pickles and caviar and Riassunto di carbonara, carbonara foam with smoked veal bacon powder. Entrance to the gala dinner will cost AED 465 for the five-course menu and at AED 715 with grape pairing.
Guests’ all-time favourite resident duo, Kevin and Donovan, will entertain diners with jazz renditions. Guests will also be offered the opportunity to meet with the Michelin star chef, Chef Riccardo Di Giacinto himself. The menu will shamelessly represent Rome’s finest cuisine, since Chef Fabio also hails from Rome, having studied at the famed Anzio Culinary School.
